I love thinkpad L480. Also, if you get a good deal then try getting Macbook 2017 Intel version. You could install Linux on that and it’s quite light weight.

Nope. I watch movies /TV Shows with focus. If I need to do something (example attend a phone call), I will pause the movie.
I can’t do parallel work while watching.
I never needed transcoding. So jellyfin ran on my Raspi4 for a couple of years. Never faced any issues to be honest. Major issue was hard disk getting disconnected, but then again I had faulty SATA to USB connectors.
